Built for how sourdough is actually baked

Standard kitchen timers count down once. Sourdough takes 24 hours across multiple delicate stages. Here is what Levain solves.

The Problem

Kitchen timers only run once. You have to reset alarms for autolyse, 4 folds, shape, and cold proof.

How Levain Solves It

One Continuous Schedule

Chain every stage from mix to bake into a single timeline. Shows exact clock times for every step, even crossing midnight.

The Problem

Sleeping through an overnight shape or fold because your phone was on silent or Focus mode.

How Levain Solves It

Alarms That Cut Through Silent

Powered by Apple AlarmKit. Alerts ring loud like a real Clock alarm when it matters, with quiet retard alerts overnight.

The Problem

Hands covered in flour and wet dough make unlocking your phone messy and inconvenient.

How Levain Solves It

Apple Watch & Live Activity

Glance at remaining time and step numbers right on your wrist or Lock Screen. Haptic taps notify you without touching your phone.

The Problem

Dough ferments faster on warm days and slower on cold days. Timers resetting to zero cause confusion.

How Levain Solves It

Over-Time Tracking

When a stage ends, the timer counts up instead of resetting. You always know exactly how far past target your dough has fermented.

The Problem

Calculating starter hydration manually and forgetting which adjustments produced your best loaf.

How Levain Solves It

Baker's Math & Photo Journal

Live baker's percentage with 50/50 starter split. Log bakes with automatic loaf cutout stickers and timeline snapshots.

The Problem

Cloud-dependent apps require logins, track private data, or fail without Wi-Fi in the kitchen.

Questions

Will the alarms wake me during an overnight proof?

Yes. Stage alerts use AlarmKit, so they ring through silent mode and Focus the way a Clock alarm does. Loud alarms are set per stage, so you can keep the overnight cold retard quiet and make the oven timer loud.

What happens when a stage runs past its timer?

The clock keeps counting up instead of resetting. Dough is ready when it is ready, so Levain waits and tells you how far past the planned time you are.

Does Levain need an account or an internet connection?

No. There is no account and no sign-up, and your recipes, bakes and photos stay on your iPhone. Details are in the Privacy Policy.

How is baker's percentage calculated?

Percentages update as you edit ingredients, with levain counted as half flour and half water — the standard assumption for a 100% hydration starter.
